Five Bean Soup
2 Tablespoons Virgin Olive Oil 3 Cloves of Minced Garlic 1 Medium Onion Diced 1/4 Cup Celery Diced 1/2 Cup Carrots Diced 3 Tablespoons Barley Rinsed 3 Cups Water 1 Can Organic Pinto Beans 1 Can Organic Black Beans 1 Can Organic Kidney Beans 1 Can Organic Navy Beans 1 Can Organic Garbanzo Beans 1 Cup Sweet Corn fresh or frozen 1 Can Organic Diced Tomatoes with Roasted Onion 1/2 Teaspoon Dried Basil 1 1/2 Teaspoon Crushed Bay Leaf 1 Teaspoon Sea Salt – French Celtic
Heat Oil in a soup pot, saute garlic and onion until the onion is translucent. Add water, celery, carrot, and barley, beans, corn, tomatoes and herbs. Add salt, cover and simmer 30 minutes. Serve. Serves 10 Prep time 10 min Cook Time 40 min. Related Articles
