Looking for fiber! Well here is a recipe that will not only warm you up on a cold winters night, but its so good for you too. I found this really awesome recipe that I think you might like. I don’t think we eat enough beans, well maybe I don’t eat enough beans. Please give this a try and let me know what you think. It sure is nice to find an easy recipe like this one, that is so healthy and good for you. YUM YUM!!!!

 2 Tablespoons Virgin Olive Oil

 3 Cloves of Minced Garlic

 1 Medium Onion Diced

 1/4 Cup Celery Diced

 1/2 Cup Carrots Diced

 3 Tablespoons Barley Rinsed

 3 Cups Water

 1 Can Organic Pinto Beans

 1 Can Organic Black Beans

 1 Can Organic Kidney Beans

 1 Can Organic Navy Beans

 1 Can Organic Garbanzo Beans

 1 Cup Sweet Corn fresh or frozen

 1 Can Organic Diced Tomatoes with Roasted Onion

 1/2 Teaspoon Dried Basil

 1 1/2 Teaspoon Crushed Bay Leaf

 1 Teaspoon Sea Salt – French Celtic

 

Heat Oil in a soup pot, saute garlic and onion until the onion is translucent. Add water, celery, carrot, and barley, beans, corn, tomatoes and herbs. Add salt, cover and simmer 30 minutes. Serve.

 Serves 10 Prep time 10 min Cook Time 40 min.
